We are experiencing a monumental stressful period of our lives at present. Pete and I are working hard to bring you nourishing recipes and wellness strategies so we can get through this together, stronger.
To combat our anxiety ridden thoughts eroding our everyday lives, we can start instilling new habits and behaviours……learning how to prepare 5minute meals can be a game changer, so lets dive in!
By eating real food that is full of healthy protein, fats and whole food carbohydrates, we aim to have minimal blood glucose spikes, which promotes consistent even energy levels, focus, clarity, and fat burning.
6 Eggs, whisked
4 small cherry tomatoe, chopped
1 handful cheese, grated
4 mushrooms, sliced
1 tbs fresh or dried herbs i.e basil, thyme, oregano
Optional: 2 tbs goats cheese, sliced spanish onion
Preheat oven to 180 degrees
Grease medium size frying pan with 1 tbs butter or coconut oil. on medium heat.
Whisk eggs in a bowl and pour into pan.
Add tomatoes, mushrooms and herbs to egg mixture.
Cook for 3-5minutes until sides are cooked through.
Then transfer to oven for 3-5 mitnues until slightly browned.
Note: Frying pan handle will be hot, use caution.
