These Fritters take 5minutes to prepare and 5minutes to cook! You can swap the paprika for a cinnamon or nutmeg spice if you’re after a sweet brunch option.
INGREDIENTS
4 Eggs, whisked
3 cups sweet potato, grated (1 large sweet potato)
1 tbs ground paprika (smoked or sweet)
Optional to serve: goats cheese, bacon, smoked salmon
METHOD
Grease medium size frying pan with 1 tbs butter or coconut oil. on medium heat.
Place piece of paper towel on top of grated sweet potato and push down in an effort to absorb moisture.
Combine sweet potato, eggs and paprika in a large bowl.
Using a tablespoon, spoon two tbs of mixture to one fritter.
Cook for 3-5minutes until sides are cooked through, flip and repeat.
*For a sweet option, replace paprika with cinnamon and nuetmg. Serve with sweetner of choice, greek yoghut or cream, berries, and banana.
SERVE WITH LOVE: Serve with options of smoked salmon, bacon, cheese, fresh greens, fresh herbs, lime wedges, salt and pepper.
